Make your own oatmeal breakfast mix

I was given a big box of instant oatmeal packets. After avoiding them for several months, I had a couple of these for breakfast last week. They were good, but also loaded with sugar. I decided to try making my own instant oatmeal mix, but without the sugar. If you try this, I suggest that you make no more than you can use in a few weeks, since I suspect that the pecans or dried fruit pieces may go rancid if left too long at room temperature.
This is much more economical than the instant oatmeal packets, and because you control the sugar content, it’s also much better for you.
Homemade instant oatmeal breakfast mix
2 1/2 cups UNCOOKED instant oatmeal (use the kind that says that it cooks in 1 minute or less)
1/3 cup wheat germ
1/4 cup chopped dried apricots
1/4 cup dried cranberries or raisins
1/4 cup chopped pecans
1/4 cup brown sugar (optional)
1/2 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
Stir together all ingredients, and decant into a canister or jar. To serve, place 1/2 cup of the mixture in a heat-safe coffee mug. Add about 1/2 cup boiling water (more or less, according to desired consistency), and stir gently. Place a saucer over the cup, and allow to sit for 1 minute. Stir, and enjoy your breakfast!

Not fond of raisins, are you? Dave says he can’t blame you…they’re not his favorite, either. Chopped dates, dried apricots, or dried cranberries will work just as well.
