How to roast vegetables

We enjoy vegetables in many dishes, but our favorite way to cook them is oven roasted with a little olive oil and garlic. You can roast just about any kind of vegetable. Cut the vegetables into bite-sized pieces, and place in a large bowl. Pour over olive oil and a little minced garlic. If you’d like, you can add a pinch of Herbs de Provence, red pepper flakes, salt, or other desired seasonings. Use a slotted spoon to gently stir the vegetables. Pour out onto a foil-lined baking sheet that you’ve lightly sprayed with olive oil spray.
Bake in a 375-degree oven about 25 minutes, or until they are lightly browned. Remove from oven and serve.

Couldn’t done it better myself. Doesn’t Dave eat carrots .. they are so lovely and sweet when roasted in the oven.
Yes, Dave loves carrots…I’m not too fond of them myself though.
