Peach cooler…delightful drink for a hot day

Every month when the Bon Appetit magazine comes, we enjoy the pictures and preparing the recipes.  I rarely follow the directions to the letter (something that irks Dave, because he thinks the first time we make something new, we should always follow the directions).  The new issue had a recipe for Gweneth Paltrow’s peach coolers, and I couldn’t resist tweaking it to accommodate the lemon thyme we have growing in our kitchen window.  Here’s a greatly modified version of the beverage:

Peach cooler

4 fresh peaches, stones removed

1/2 cup vodka

1 1/2 cups Pellegrino water (any fizzy water will do)

1 tablespoon Triple Sec

Juice of one lemon

1 fresh lemon, thinly sliced

2 tablespoons sugar

1-2 cucumbers, sliced, de-seeded, and cut into spears

lots of ice

sprigs lemon thyme

1 bottle Prosecco

Roughly cut the peaches, and place in a pitcher.  Take a wooden spoon and muddle the peaches until they are a big pulpy mess.  Stir in the vodka, Pellegrino water, triple sec, sugar, lemon juice, and the sliced lemon.  Pour into tall glasses.  Add one cucumber spear to each glass, along with a sprig of lemon thyme.  Add ice cubes, and top off each glass with the prosecco.  Our recipe made about 8 glasses.

I think this would also be good without the alchohol, substituting fresca or other lemon lime beverage.  It would be good with iced green tea, too.
