Corn pico de gallo

We had grilled salmon on Sunday, and whipped up a little corn pico de gallo to go with it.  Here’s the recipe:

Corn pico de gallo

3 1/2 cups frozen corn (or grilled corn, cut from the ear)

3 Roma tomatoes, chopped

6 green onions, chopped

1 jalapeno, minced

Juice of 2 limes

1 teaspoon minced garlic

2 tablespoons olive oil

1/4 teaspoon kosher salt

Dash hot sauce

freshly ground black pepper

Combine all ingredients in a medium-sized bowl.  Toss well to combine, and adjust seasonings.
