Skillet Filet Mignons

We had a delicious dinner tonight…filet mignons with feta cheese and kalamata olives, green beans with garlic and mushrooms, and twice-baked potatoes. 

Here’s the recipe for the filets.  We like to purchase those little filet mignons from the butcher, and then cook them indoors in a cast iron skillet.  The skillet makes them crunchy on the outside, and deliciously tender inside:

Cast Iron Skillet Filet Mignons

1 1/2 teaspoons garlic powder

1 1/2 teaspoons dried basil

1 1/2 teaspoons dried oregano

1/2 teaspoon sea salt

freshly ground black pepper

2-4 1-1/2″ thick filet mignon steaks

1-2 tablespoons olive oil

1 lemon

2 tablespoons crumbled feta cheese

5-6 kalamata olives, chopped

Combine garlic powder, basil, oregano, and salt.  Stir in freshly ground black pepper.  Rub mixture on the steaks. 

 

Heat  a heavy cast iron skillet on high until hot.  Add oil.  Place steaks in oil and cook 10-14-minutes or to desired doneness, turning once.  Place on plates; sprinkle with lemon juice, top with cheese and olives and serve.
