Easy and delicious fish

We both worked late last night, and when we came home, there really wasn’t anything quick and easy (and healthy) for us to have for dinner. Frozen fish filets always defrost quickly, so I took a couple of swai filets out of the freezer. Then I mixed about 1/4 cup mayonnaise (do not use diet mayonnaise, Miracle Whip, or anything that is not 100% real mayonnaise) with one teaspoon Creole mustard, one chopped garlic clove, a pinch of red pepper flakes, half a teaspoon of Herbs de Provence, and a teaspoon of capers. I stirred everything together gently, and set it aside aside. Then, I smeared the bottom of an ovensafe cooking dish with olive oil, and placed the filets on top of the oil. I used a small spatula to smear the tops of the filets with the mayonnaise mixture, and then placed the pan into a preheated 375-degree oven on the top rack. I cooked the fish until they were almost done through, and then turned on the broiler to high and cooked them for about 45 seconds until the tops were sizzling and the fish was cooked through.
We served our fish with some sauteed green beans with garlic and more Herbs de Provence, and some roasted potatoes that we cooked in the microwave, and then finished off in the oven. Start to finish, our dinner took about 15 minutes to prepare, and it was delicious.
