Fancy pants pea salad

We don’t really like peas that much.  As a vegetable, they are very starchy and tasteless.  But toss a few uncooked peas into a salad, and they are delicious.   They have a beautiful color and they pop in your mouth (which is kind of cool).   Really the best way to eat peas is uncooked.  Here’s a pea salad that we invented last night.  I indicate bacon in the recipe, even though our salad didn’t have any…I had the idea to use bacon, but when I went to get some for our salad, someone had eaten it all (evidently in a ham and bacon sandwich…that’s like a double pig sandwich and completely illogical, but to Dave bacon and ham naturally go together).

Pea Salad

1 16oz. pkg frozen peas, thawed

4 stalks celery, each piece split down the middle, then sliced into 1/3″ pieces

3 green onions, sliced, with tops

1/4 cup sliced almonds

4 slices cooked crumbled bacon (optional)

3/4 cup shredded cheddar cheese

1 cup shredded carrot (about 2 medium carrots)

Dressing:

1/2 cup mayonnaise

1/2 cup sour cream

2 cloves garlic, minced

pepper, salt to taste

Combine and serve.  Serves 6-8.
