Dave, the master crafter of sandwiches (tee-hee)

Dave is a lover of sandwiches.  When I am out of town visiting family, I suspect he eats sandwiches all day long, for every meal (that, and burritos).  Did I mention that he loves sandwiches?  He actually ADORES sandwiches.  Me?  Not so much.  In fact, I really couldn’t care less about bread.  Unless it’s homemade and hot from the oven, you’ll rarely catch me eating it.  Bread here in the ‘States is usually pretty bad anyway, so no big loss, really.  I suppose if we lived in Germany where they have the best bread ever, I’d eat more of it.

So, even though I am not a lover of bread, I still enjoy Dave’s sandwiches.  Dave is the Master Crafter of Sandwich Making (please refrain from saying  “master crafter” fast too many times, because I just realized that it sounds sort of bad).  Yes, that’s Dave’s actual title around here.  And he’s very particular about ingredients, too.  He likes crunchy ciabatta bread (actually, Dave probably likes our homemade Challah the best, but since I just gave you the recipe for that earlier today, you’ve hardly had time to try it for yourself yet).  He also likes fresh Roma tomatoes (don’t get me started again on tomatoes and how they should be fresh from the garden, or they are completely useless), green onions, real mayonnaise (homemade, Hellman’s, or Duke’s are best…please do not even consider diet mayonnaise, which is just wrong), Boar’s Head Cajun smoked turkey, smoked gruyere cheese, and sliced avocadoes.  Dave also puts a few red pepper flakes on his sandwiches, which I do not particularly care for on this sandwich.  But, this is the South, where zippiness rules.  And if a man wants to ruin a sandwich with red pepper flakes, then I guess that’s completely up to him.

Dave is occasionally responsible for dinner, when he wins the battle for the kitchen, which is a constant struggle around here, because we both love food, cooking, and eating.  When he wins, he sometimes makes the famous “Dave Sandwich,” which I’m sharing with you here today…lucky you (and please do not use diet mayonnaise…just sayin’).

The Dave sandwich

2 ciabatta buns, split

1 clove chopped fresh garlic

2 tablespoons butter

2-3 tablespoons Hellman’s or Duke’s mayonnaise

1/4 pound Boar’s Head Cajun smoked turkey

1 Roma tomato, thinly sliced

2 green onions, chopped

1 avocado, peeled, seed removed, and sliced

red pepper flakes (optional for people who do not live in the South)

pepper and salt to taste

4 thin slices smoked gruyere cheese

Take the ciabatta bread halves, and slather with the garlic and butter.  Toast very lightly under the broiler.  Remove from broiler, and coat with mayonnaise.  Then, layer on the tomatoes and turkey.

Sprinkle with the green onions.  Cover with the avocado, pepper flakes and the salt and pepper.  Top with the cheese.  Place under the broiler, and cook (monitoring constantly) until lightly brown and bubbly.  Remove from broiler, place the halves together, and serve.  Serves 2, deliciously.
