Asher’s banana bread

Our friends Olga and Anthony brought some delicious banana bread to our house recently.  We love banana bread of all types, and this bread is no exception.  It is moist and not too heavy, and the dried cranberries add a nice touch.  Olga says to tell you that the recipe was developed by her friend Lillie.  Evidently, Lillie’s son Asher is a big fan of this bread.  After you try it, you’ll be a big fan, too.

I’m wondering if I can substitute Greek yogurt for the sour cream?  I’m so in love with Greek yogurt, I’ve been putting it into everything lately.  I think when I make this next, I’ll give it a try.

Asher’s banana bread

1/2 cup butter, softened to room temperature

1 cup white sugar

2 eggs, lightly beaten

3 medium bananas, mashed

1 cup real sour cream (works the best to keep bread moist)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 teaspoon baking soda

2 1/4 cups all-purpose flour

1/2 cup chopped walnuts

1/2 cup dried cranberries

Preheat oven to 325 degrees fahrenheit.

Cream together butter and sugar.  Stir in eggs, bananas, sour cream, and vanilla.  Add salt, baking soda, and flour.  Stir in nuts and cranberries.  Pour into a greased loaf pan.  Bake for about 1 hour, until toothpick comes out clean.
