Dave’s guacamole

Dave loves avocadoes more than anyone on the planet.  I frankly could take them or leave them…they just aren’t that special to me.  When Dave sees them on sale at the market, he picks up 5-10 of them, and then gives them to me to figure out what to cook with them.  We slice them for omelets at breakfast, serve them alongside steaks for dinner, and eat them in sandwiches.  When they’re too soft for anything else, we make guacamole.

Dave’s guacamole

6 avocadoes

1 clove garlic

1/4 teaspoon cumin

juice of 2 limes

3 green onions, minced

2 Roma tomatoes, deseeded and chopped

dash of salt, to taste

Mash the avocadoes in a large bowl (tip: use a pastry cutter).  Stir in the remaining ingredients, and serve.  This makes a great dips with corn chips, and also freezes well.  We usually serve one portion, and then freeze the rest in three equally-sized portions.
