Pork chops in wine sauce

I picked up an enormous package of pork chops at the market the other day.  There were enough for four meals.  After placing most of them in the freezer for another time, I set aside two for dinner.  They were delicious.

Pork chops in wine sauce

1/4 cup flour

1/2 teaspoon garlic powder

1/2 teaspoon Herbs de Provence

Freshly ground black pepper

2 large pork chops, trimmed of fat

Olive oil

1/2 onion, thinly sliced

2 cloves garlic, minced

3/4 cup red wine

1 cup beef broth

Stir together the flour, garlic powder, Herbs de Provence, and black pepper on a plate.  Roll the pork chops in the flour, making sure to get the mixture on both sides of the meat.  Shake off excess, and place the chops in hot olive oil in a cast iron pan on medium-high heat.  Cook 1 minute on each side until lightly brown.  Remove chops from the pan, and place in an oven-safe baking dish; set aside.

Cook the onion in the cast iron pan until it is limp.  Add the minced garlic, and cook until the garlic is soft and aromatic, being careful not to burn it.  Turn up the heat, and pour in the wine and beef broth.  Cook and stir for a few minutes, until the liquid is slightly reduced.  Pour over the pork chops.

Place the pork chops in a preheated 325-degree oven, and cook for about 35 minutes until the chops are tender and cooked through.  Serve with rice, noodles, or potatoes.

Serves 2.

    Pork chops … good comfort food. Eat a lot of pork chops – easy to cook and for lonely diner – perfect, never eaten it with onion wine sauce, but ready to try *smile – need

      I thought about putting some mushrooms in there, too, which would have been good. We don’t eat many pork chops here, but after having them this way, I think we’ll be eating more of them.

        Personal I love pork – lot of flavors in the meat, even if it’s like it as in good old days *smile … I really like the idea with onion sauce. Mushrooms goes with any meat and more common. Pork is still cheap compare to other meats. Over here cheaper than fresh chicken.

        It’s more expensive here, as compared to fresh chicken.

    This would go down well at our house. I really love pork chops with a cream and mustard sauce, but this would be a delicious change. Mushrooms would be a nice addition, as you suggest!
