Quesadillas: Mexican-style grilled cheese sandwiches

Dave is the one who taught me that almost any kind of leftover can be placed between a couple of tortillas, and turned into a burrito, taco, or quesadilla.  Last night, we had some leftover taco meat from a few evenings ago.  I took a large flour tortilla, and placed it in a large frying pan on medium-high heat.  I sprinkled on cheese, the taco meat, some diced tomatoes, and a couple of chopped green onions.

Then I topped that with more cheese, and covered it with another flour tortilla, and let the quesadilla cook until it was brown on the bottom.  I flipped it carefully, and let the other side cook.  We made two of these Mexican-style grilled cheese sandwiches.  They taste great with sour cream.

We make these all the time.  Some of our favorite fillings include refried black beans, leftover grilled zucchini and yellow squash, diced ham or sausage, corn, green onions, leftover brisket, jalapenos, and diced tomatoes.  The only necessary ingredients are a tortilla and grated cheese to hold it together.
