Mexican eggs

These special eggs were invented by Dave’s dad, who used to make them for the family on the weekends.

They’re delicious, and easy to make.

Mexican eggs

4 corn tortillas

oil

refried beans

grated monterey jack cheese

4 eggs

1 Roma tomato, seeds removed and diced

1 green onion, sliced

Guacamole (recipe found here)

Cook the tortillas in a few tablespoons of hot oil until crisp.  Drain on paper towels.  Coat each tortilla with refried beans.  Cover each tortilla with a few sprinkles of grated cheese.

Break the eggs into the hot oil, and fry until they are lightly cooked through.  Place one fried egg on top of each tortilla.  Cover with the diced tomato, diced green onion, and more grated cheese.  Serve with guacamole.

    Wov … this perfect for me over next the weekend … and with a good movie – all me draped over the big couch. Love the look of this. Refined beans will be a problem, but somehow I will fix it with our brown beans and add grilled bacon, before I use the mixer. Will let you know!

      If canned refried beans are not available, then you can mash cooked pinto, kidney, or black beans. Just use a potato masher or a fork to get them to the desired consistency.

        It was the way I was thinking too … really like the dish – and the combination of all the ingredients. So this weekend.

      Yes, they are so delicious! I make these for our breakfast about once a month, but they are actually pretty good for lunch or dinner, too.
