Grilled chicken salad

Now that summer is here, our grill is in use almost every evening.  This past weekend, our friends Olga and Anthony brought over a delicious marinated chicken.  While the chicken cooked on the grill, we drank wine and talked.  Marinated for 24 hours in a delicious blend of lemon juice, fresh herbs, and olive oil, the chicken was tangy and tender.  I’ve already asked for the recipe, so someday soon, you’ll see it here.

It was so delicious we ate it all, and there wasn’t any left to make our favorite grilled chicken salad.  So, yesterday I made chicken salad with a baked chicken from the grocery store.

Grilled chicken salad

1 whole chicken, grilled (or baked) and cooled

1/2 onion, peeled and diced (we used a red onion)

1/2 teaspoon cumin

juice of 1 lime or lemon

1/3 cup chopped pecans or walnuts

2-3 tablespoons chopped parsley

Salt and pepper, to taste

Mayonnaise (start with 1/2 cup, and add more according to taste)

Separate the chicken meat from the bones, gristle, skin, and fat.  Chop the meat, and then place in a bowl with the onion, cumin, lemon, pecans, parsley, salt, and pepper.   Stir in mayonnaise, according to taste.  Add more cumin, if desired.  Serve in a sandwich on spinach leaves, or by itself.
