Chicken on the grill

About once a week, we cut up a whole chicken and cook it on the grill.  This week, I made a marinade that was especially good.  We allowed the chicken to marinate for 24 hours, giving the meat a slightly tangy flavor.

Grilled chicken

1 cup orange juice

juice of one lime

6 cloves garlic, minced

2 teaspoons cumin

1/2 teaspoon cayenne pepper

1 tablespoon dried oregano

1 bundle parsley, chopped

1/4 cup olive oil

1 cup white wine

1 chicken, cut into pieces

Whisk together the orange juice, lime juice, garlic, cumin, cayenne pepper, oregano, parsley, olive oil, and wine.  Place in a glass dish or large plastic bag.  Add chicken pieces.  Cover, and allow to marinate for 24 hours, turning chicken pieces occasionally.  Cook on a hot grill for 40 minutes, basting with leftover marinade.  Remove from grill when chicken is cooked through.  Serves 4.
