Oatmeal date muffins

We made these muffins for breakfast yesterday.  Not too sweet, they were light and delicate in flavor, and would be very tasty with honey butter.  Dave ate six, so I’m guessing they were a hit.

Oatmeal date muffins

1 cup rolled oats, uncooked

1 cup buttermilk

1/2 cup brown sugar

1 egg, lightly beaten

1/4 cup wheat germ

1/2 teaspoon pumpkin pie spice

3/4 cup all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chopped dates

Stir together the rolled oats and buttermilk.  Set aside for 15 minutes.

Preheat oven to 375-degrees fahrenheit.

Stir the brown sugar and egg into the buttermilk mixture. In a separate bowl, whisk together the wheat germ, pumpkin pie spice, flour, baking powder, and salt.  Pour dry ingredients into the buttermilk mixture, and stir together until incorporated.  Fold in the chopped dates.

Pour batter into 12 paper baking cups (or a greased muffin pan).  Bake for 25 minutes until a knife comes out clean.

    Dates are one of my most very favourite foods in the world, full stop! I’ve just printed this recipe and know what I’m having for breakfast tomorrow. Dave knows a winner when he tastes one, clearly!
