More stuff on the grill…pineapple

I’m in a grilling frenzy this week.  So far, I’ve cooked chicken, corn, naan, and pineapple.  Pineapple can be a little messy, but it is very easy.

Start with a fresh pineapple.  Use a knife to cut off the top.  Then remove the peel and core.  Cut the pineapple into four pieces, and place the pieces in a glass pan.  Pour over a little canola oil.  Sprinkle with a few tablespoons of brown sugar, corn syrup, honey, or molasses.  Sprinkle lightly with a little cinnamon.  Allow to sit at room temperature for about an hour, turning once or twice to ensure that all sides of the pineapple are coated with the marinade.

Cook on the grill at low heat for 10 minutes, turning once.  Remove from heat and serve.
