I recently whipped up some chicken salad for our lunches. This time, I decided to add some dried cranberries and sunflower seeds to the mix. We had a green apple sitting around, so I threw that in there too.
The new additions were very tasty. Dave usually complains about food surprises, particularly when I change a tried and true favorite. This time he said nothing…I’m pretty sure he liked it as much as I did. It was delicious on spinach leaves. Dave had his on homemade French bread. The next time I make this, I want to try substituting thyme or marjoram for the cumin.
2 chicken breasts, cooked and chopped (3 cups)
1 whole green apple, cored and chopped
½ cup dried cranberries
¼ cup chopped Italian parsley
Juice of ½ a lime
½ cup chopped pecans
2 tablespoons chopped red onion
3 tablespoons sunflower seed kernels
1 teaspoon powdered cumin
¼ teaspoon salt
¼ teaspoon pepper
1 cup mayonnaise (more or less)
Combine all ingredients, adding slightly more or less mayonnaise according to taste. Serve on French bread or lettuce or spinach leaves.
