Ham and cheese breakfast strata

This strata was easy to put together, and I was able to chop the vegetables and ham while I was making dinner the evening before.  I also like using leftover pieces of stale bread in this recipe…homemade bread, which we make a lot of,  goes stale quickly, it’s nice to have some recipes that allow us to use bread that’s past its prime.  Also, the ham in this is totally unnecessary.  Although we included it because we had some hanging around in the refrigerator, you really can use whatever you want…how about chopped green or red peppers?  Leftover chunks of diced chicken?  Or, for a completely vegetarian version, some lentils or black beans would be perfect, too.

This is quick and easy to put together, but it does need to sit for a while, refrigerated, before you cook it.  We let it sit for 8 hours, but a shorter time works well also.

Ham and cheese breakfast strata

5 slices stale bread

1 cup chopped ham

¾ cup chopped green onion (3-4 green onions)

3 mushrooms, sliced thin

1 cup shredded sharp cheddar cheese

½ teaspoon lemon pepper

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper, to taste

6 eggs

1 ¾ cup milk

¾ teaspoon dry mustard

Spray a 9-inch square baking dish with nonstick cooking spray.

Break the bread into small pieces and place evenly in the baking dish.  Top with the chopped ham, green onions, then the shredded cheese.  Sprinkle with the lemon pepper, onion powder, garlic powder, and salt and pepper to taste.

Whisk together the eggs, milk, and dry mustard.  Pour over the bread and cheese mixture.  Cover and refrigerate 30 minutes or up to 8 hours.

Preheat oven to 350-degrees Fahrenheit.  Uncover and bake for 30-40 minutes, or until a knife inserted in center comes out clean.  Let stand 10 minutes before serving.

    Here is an other one for me to dry out .. had planned the chicken salad today, but it’s such a bad weather – hopefully it will be tomorrow or Thursday. So this goes on file – never tried strata before. Thanks for this one.

      We’re about to get bad weather here, too…hurricane coming, and will make landfall tomorrow.

        It’s going to make landfall East of us (probably New Orleans), so we will not get the worst of it. Hopefully, it will not cause a lot of damage to those in New Orleans who have already suffered too much.

        I know .. but they have every year … and more than once. Was in NO 2002 under Isidore – and already then they talked about that one day the city will drawn because it’s built lower then the water levels of the river and the lake. So even without a major storm they thought it would happen. Hope that they will come out of it – without any bigger damage. Because damage there will always be.
