Smashed potatoes

These potatoes are very easy to make, and they’re tasty with all kinds of main courses.  We enjoy them with our favorite pork chops, but they’re also good with chicken, or even with eggs for breakfast.  We like how they’re a little crispy on the outside.

Smashed potatoes

4 -6 small red potatoes  (allow 2-3 potatoes per person)

olive oil

salt and pepper

Cook the potatoes in boiling water or the microwave, until they are cooked through.  Set the potatoes on a cutting board, and allow to cool.  Use the palm of your hand or the bottom of a bowl or glass to firmly push down on each potato, flattening it to about 1/2 an inch thickness.

Place a little olive oil in a heavy frying pan, and cook the potatoes on medium high heat until they are golden brown, turning once.  Drain on paper towels.  Salt and pepper according to personal taste, and serve.  Serves 2-3.
