What a great idea! I love grilled vegetables and this is a really neat approach to lasagna.
Once a week, we try to have a vegetarian dinner, and this meal is so easy to prepare.
Love everything about this dish … but fare too many ingredients for a lonely diner. Great that you go publish on our websites too. Like that.

Yes, it does have more ingredients than our usual recipes. It might be good for a dinner party, or just to freeze in several portions for the single diner. I still can’t believe that Dave ate THREE portions of this when we made it!
