Southern style fried eggplant

Dave’s not big fan of eggplant.  Of course, I had no idea of this when I decided to prepare eggplant for a dinner last week.  So, while I loved this dish, he did not.  He refused to try it, choosing instead to feed his eggplant to the dog.  When I asked him if he’d ever tasted eggplant, he said he hadn’t, so he’s not even sure if he likes it or not…

Southern style fried eggplant

2 eggs

1/4 cup milk

1 medium-sized eggplant, sliced into 1/2″-thick slices

1/3 cup panko bread crumbs

1/2 cup flour

salt and pepper, to taste

Canola oil

Break the eggs into a shallow glass dish.  Beat the eggs, and whisk in the milk.  Place the eggplant slices in the egg mixture, and allow to soak for 5 minutes, turning once.

Meanwhile, whisk together the bread crumbs, flour, and the salt and pepper.  Remove the eggplant slices from the egg/mixture and place in the flour/breadcrumb mixture.  Turn to coat.

Pour enough oil into a heavy pan to cover the bottom of the pan.  Place the pan on medium-high heat.  When the oil is hot, add 2-3 eggplant slices at a time, and cook 2 minutes per side, until they are light brown.  Continue cooking the eggplant slices until all are cooked.  Drain on paper towels.
