White chocolate dessert bars

On the downstairs floor of the hospital where we have been spending most of our time is a delightful coffee shop.  My aunt and I have been eating our lunches there every day.  One day this week, they served her a delicious white chocolate dessert.  It inspired me to try making something like it myself.  This dessert is very rich, so be sure to cut it into small bars.

White chocolate dessert bars with almonds and dried cranberries

1/2 cup unsalted butter, chopped

12 ounces white chocolate chips

3 eggs

1/2 cup sugar

2 tsp vanilla extract

1 1/3 cups self-raising flour

1 cup flaked almonds

1 cup dried cranberries

1/2 cup white chocolate chips

Preheat oven to 350 degrees fahrenheit. Lightly grease a 10 by 14-inch pan.

Melt the butter and chopped chocolate over low heat.  Remove from heat. Whisk the eggs, sugar and vanilla in a bowl. Stir in the melted chocolate mixture, then fold in the self-raising flour. Stir in the almonds, cranberries, and 1/2 cup white chocolate chips.   Pour into the prepared pan, and smooth the top.  Bake for 20-25 minutes until lightly browned, and a knife comes out clean.  Cut into bars.
