Double cornbread

Last night we had bean soup and corn bread.  The cornbread was a special request from my uncle.  Turns out cornbread is one of his most favorite treats.  Here’s the recipe.


Double cornbread

1 egg

1/4 cup vegetable oil

1 cup cream

4 tablespoons sugar

1/2 teaspoon salt

1 cup cornmeal

1 cup self-rising flour

1/2 cup frozen corn

1/4 cup chopped green onion

Preheat oven to 375-degrees fahrenheit.  In a large bowl, whisk together the egg, vegetable oil, and cream.  Stir in the sugar and salt.  Add the cornmeal, flour, corn, and green onion.  Stir together gently until just mixed.  Pour into a greased 9-inch diameter pan with 2-inch sides.   Bake for 30 minutes, or until a knife comes out clean.
