Pepperoni cheese

Dave’s still on his low-carb diet, and has lost almost 20 pounds with it.  He’s eating a lot of vegetables, with a little bit of meat and cheese.  For a treat this week, I made him some pepperoni cheese that I invented on the spot.  Try this on sliced vegetables (cucumber, carrots, and celery) or crackers (if you’re not on a low-carb diet).  It’s easy to put together, and is perfect for an after-work snack or as an appetizer.

Just because this is low-carb, do not think that it is low calorie…this is loaded with calories, which is why it is a once in awhile snack for us.  You also don’t need more than a few tablespoonsful of this cheese per serving.  Dave and I enjoyed it with tremendous plates of freshly cut vegetables, and it made the perfect dinner…why yes, we did have this for dinner last night.  We’d each had a long day, and didn’t feel like cooking.

Dave’s low-carb pepperoni cheese

8 ounces cream cheese, softened

1/2 cup finely chopped pepperoni

1/4 cup mayonnaise

1/3 cup grated mozzarella

2 teaspoons minced garlic

1/2 teaspoon Herbs de Provence

pinch red pepper flakes

1/4 teaspoon black pepper

Stir everything together, and serve on sliced vegetables and/or crackers.  Keep refrigerated.
